Title: How Do You Cook Your Steak?
Post by: LooN3y on August 08, 2012, 10:03:31 AM
do you marinate? if so what marination?

seasoning? what seasonings? how long do you cook it for? do you burn it on the outsides and rare/medium rare on the inside?

or are you one of the well done guys (lol no knock, people have their preferences but meatlovers consider it a waste)

i usually just put salt and pepper and grill it on charcoal, if i had steak recently and having it again, ill prob put some lawrys or montreals steak seasoning

you def need seasoning

i use grill mates "sweet and spicey"

marinating is over rated though

depending on the steak... on a sirloin i could really give a shit but on a ribeye or new york strip i marinate it with a lil zesty italian sauce on one side throw some steak seasoning and a tad bit of garlic powder on it and cook all my steaks medium, on Tbones and Porterhouses i just put steak seasoning with a bit of lemon pepper when its almost done to give it a lil more juice to it

when i make beef fajitas i marinate that shit in soy sauce, lemons, and fajita seasoning, for about 4 hours before the grill then throw some lemon pepper on there before i get it on the grill and just incase if they start getting dry i throw a lil lemon butter on it but not too much cus it will delude the seasoning and taste too lemony
as i tried that recipe more i learned to ease up on the marinate cus i dont want it too salty or lemony so i got to the point where its just right

What type of beef do u use for fajitas? Sounds bomb and easy to make I wanna try it, gonna use ur marination recipe, when u grill it on the grill u use tin foil? And for veggies u use bell peppers and onions?
Title: Re: How Do You Cook Your Steak?
Post by: O.G A.Geesta'z on August 08, 2012, 11:42:11 AM
just regular HEB fajitas...
i dont use foil anymore but you can it doesnt hurt i just dont cus it catches on fire sometimes and is a big hassle cleaning it up

i dont use peppers, bell peppers or onion only when i cook brisket i throw all that shit on there and cook that bitch medium/medium well and man its fuckin bomb

shit i know Cali niggas can BBQ but down here in Texas we take hella pride in that shit, when i go to my boys house they dont let me touch the grill or there food and same here when they come over to my house, everyone likes there shit different and everyone likes to do all the cooking, alot of pride in it

i also make some bomb jalepenos wraps, i get top price bacon wrap it around shrimp, half a jalepeno (i use the canned jalepenos) cream cheese, then stab a toothpick threw that bitch

then i do the same but instead of shrimp i put a slice of beef fajitas and cook it about medium (the fajita) or well done

and i also make them with chicken fajita too, you gotta try that shit man its bomb
Title: Re: How Do You Cook Your Steak?
Post by: O.G A.Geesta'z on August 08, 2012, 11:47:02 AM
also when you cook those you gotta put it on the top grill for a while like your warming up tortillas cus if your throw them right on the fire they catch on fire like crazy and ruin the cream cheese and could burn the bacon

so wait until the fire dies down and the coals or mesquite is just right then throw those hoes on there and let them sit and cook just right, i swear man the shrimp ones are my favorite but they all taste good, you could use foil for those too if you like
Title: Re: How Do You Cook Your Steak?

lemon juice real garlic cracked peppercorns you gotta massage and beat the steak up a lil bit to push the peppercorns into it ( no homo) then marinate it for anywhere from a few hours to over nite

let the steak get room temperature before you cook it, if cooking indoors use cast iron steel if possible

this is preferably for a ny strip but will work for all steaks other cuts may require a lil tenderizer....if you do what i said i promise you world class steak.

never refute the word of a fat nigga when it comes to maters of food.

Rare.

Marinated 24 Hours in garlic, Worcestershire, pepper.

Throw some butter on that bitch after you take it off the grill, wrap it in tin foil and let that motherfucker sit for 5 minutes or so....

Accompany with a gin martini.

when i make chicken breast, chicken fajitas, and chicken strips i marinate it out of the thickest italian dressing i can find (cus it absorbs it and keeps the chicken moist and juicy even after the grill) throw hella lemons on it then when its done marinatiing before i throw it on the grill i put a shitload of lemon pepper on it and after its off the girll its juice and people tell me it taste like the lemon pepper from wing stop... thats my lil method for chicken (except with legs and thighs)

Listen to the grill master

Don't put shit else on a nice steak but, a little olive oil, good amount of Kosher salt (yes NIK) and good amount of fresh cracked pepper.  Let the steak come to room temp before going on the grill.  Get your grill as hot as possible.  Spray a little pam, or olive oil on the grill so your meats dont stick.  Careful though that shits will flame up.  Throw meats on that bitch for a quick sear on both sides 30-45 seconds.  Don't be scared of the flames and smoke.  Then, pull steaks off for about 15 minuted and cool down grill to good cooking temp @400.  Put steaks back on after 15 mins for about 3-5 mins per side depending on thickness and cut of meat.  Don't flip the shit out of the meats.  Let it chill, and don't keep checking that shit either.  Pull the bitches when they get to about 220 measure with a therm, and dont keep poking.  Put on a plate, cover with foil and let them rest for about 5 mins.  Easy.

Olive oil has a low smoke point and will kill the flavors. Use canola or another type.

Salting prior to cooking dries out the meat. Save it for after the steaks are done.

I agree with the grill master up until this point but I'll just cook it for a very short time on a fying pan. Leave it nice and raw... And maybe use butter instead of olive oil.

I've never noticed it killing the flavor.  I will look into that though.  I season my steaks right before they go on the grill so no worries about drying it out.

Room temp is key.  Good advice.  Lots of folks get scared and pull the meats right out of the fridge.  No bueno and hard to get doneness right.  I really noticed my grill game going to the next level after getting a thermapen.  If you grill it's a must have.

^never seen that?

Intersting that this thread got bumped. On sunday i had one of the best steaks that i have ever had! Best steak i've had in a long long time. Was a 350g porterhouse, medium rare of course. man it was cooked to perfection. So juicy and an awesome smoky flavour.  Was served with chips, salad and onion rings.
Had a three cheese plate appetiser first. Consisted of pita bread/crackers, three cheeses, thinly sliced pear, one strawberry, a blob of jam on a big plate. All the cheeses were nice.
The place was expensive but its just a pub and the steak was way better than more expensive steaks i've had including ones i've had at actual steak houses.
The coolest thing is we ended up at this place because of circumstance. It was one of those days where the plans kept changing and some places we were gonna go were closed. Cool when shit works out like that.

damn i really should of took a pic of the ones i made

all you gotta do my dude is what petey said

get a strip of bacon (i use the ones from the meat market i got like 50 strips for 3 bucks because the packages ones are like 10 strips for 3 bucks plus they are longer)
lay the strip out flat get the half slice of jalepeno (you can take the seeds out if you want i choose not too though) then put the cream cheese on just like you did, then put a piece of meat, or shrimp on top. roll that bitch up and stab a toothpick right threw the center and bam you got it

no if your grilling those hoes remember sometimes they catch fire cus of all the grease so you gotta make sure your coals are read hot but not flaming or you will burn the shit out of them, (some people like it crispy like that)

if worse comes to worse and you wanna be a jabroni you can just bake them in the oven like a queer

try it again Loon3y im expecting to see better results next time bro

Typically, I heat my grill up so that it can create a good sear. Depending on the steak and how I'm feeling, I might use a simple Salt/Pepper rub or something a bit more elaborate. I always make sure my steak is room temperature. Drop it on the grill for about 2 minutes and rotate it a bit to get the grill marks. After 2 minutes, flip it over and follow the same routine. I'll take it off and let it rest for about 5 minutes, so that the juices settle. If I'm feeling like toppings, I'll grill up some Onion's and Mushrooms and put them on top with some Blue Cheese.

They always come out very nice and juicy and perfectly medium.

People who get steaks well done are the Diane Feinstein-Democrat pussies of the world who don't let their kids trick or treat and petition their school to remove any references to Christmas during Christmas time.

Everyone has their own unique palette of course, but saying well done tastes better than medium-rare or rare or medium is like saying, "well I know most people like their fries animal style, but I just enjoy mine with dog shit instead. nbd right?"

balls have nothing to do with it. Not having balls is the guy who looks at his dining partner and gets squeamish when he sees that juicy red blood being devoured and gets squeamish. You are horrorcore rapper man, you need to embrace some of this evil and man up.

I prefer a medium NY Strip myself, these Ribeyes I get from the Mexican meat market down the street are beasts though, I cook it medium rare and chew the fuck out of it like an animal and when I'm done I feel like a bad ass
that already seasoned carne asada they got at the mexican markets is the shit. I'm convinced they marinate that shit in cocaine.

32oz Porterhouse From Neros (Ceasars Palace) its gone now but shit was hands down the best steak i ever ate in my life.

tried Mortons, and Carnivore (160 dollars steak split between 2)

but yet to try cut, maestros, ruth kris and lawrys

funny how much changes in 10 years, we went from gangsta crip, surenos, asian boyz, to porterhouses, new york strips, and steak tartare
