It's gotta be Knoc-Turn'Al's "Muzik" or Ludacris' "Stand Up" for me. Both are classics.

I hate his music now and think he's a total idiot, but back in the day, first three albums or so, he was awesome, my all time favorite production has to be:
Through The Wire.
Honorable mentions - Champion off Graduation Day, Higher by Do or Die and all the stuff he did on Common's BE album.
He's a classic example of how fame and fortune can ruin a person. I wish the 2004 Kanye West could talk to the Kanye West of today and be like "man, what happened to you, I remember when you would be ecstatic just to be in a studio, or have someone give you 500.00 for a track, or be standing next to Jay-Z, now nothing is ever good enough anymore".

it's impossible to narrow it down to just one joint or even a top three for me, but definitely everything he did for Beanie Sigel and Scarface for sure
Beans was the first artist to really break Kanye and Just Blaze on his first album
