Wizzball (Atari ST)
International Karate + (Amiga)
Final Fight (Arcade)
Speedball 2 (Amiga)
Quake2 - Multiplayer part (PC)
Half Life (PC)
NBA 2k (Dreamcast)
Urban Terror (PC)

There are loads others but that will do for now.  If I had to pick the favorite of favorites then Quake2 is probably winner as the multiplayer addons for it where so addictive.  But for single player action Half-life is wins.
