Mexican Bar-B-Que
(Birria)
Serves 6
Ingredients:
1/2 kilo of pork, cubed
1/2 kilo of beef, cubed
5 peppercorns
1 clove of garlic
1 small piece (cube) of sweet chocolate
1/2 onion
1 tsp. oregano
2 cloves
8 Tbsp.. vinegar
1/2 tsp. thyme
1 - 2" stick of cinnamon
1 pinch of cumin
2 large tomatoes
1 - 1/4" piece of ginger
2 chili anchos, seeds and veins removed, sautˇed in oil
2 bay leaves
Salt to taste
Oil for frying
Water
Garnish
1/2 onion, diced
Corn tortillas
Preparation:


Allow the meat to soak in enough water to cover during half an hour to clean it. Drain.

Grind all the ingredients except for the bay leaves and strain.

Fry the meat in the bottom of a pressure cooker with a little oil. Add the sauce, the bay leaves and 1 1/2 cups of water, cover and cook until meat is tender.

Once done, open the pressure cooker and adjust seasonings. If the sauce seems too thin, bring to a boil and reduce.

Serve hot with the chopped onion and corn tortillas.

Shredded Cheese
Potato Wedges(a little bit bigger than freedom fries (we call them now )
Guacamole
Pineapples chunks(cut into smaller chunks)
couple of raisins (10-15 raisins to be exact)
and don't forget lemon juice...for taste

then wrap it up into a fat burrito mmmmmmmmmm
