Title: hold up BPG, this is the TRUE recipe for pizza hut
Post by: techniec on December 25, 2001, 07:52:42 AM
i dunno may be the canadian and american pizza huts are different, but i work at pizza hut here in the T DOT,
dixon and martingrove , holla
like i said i work at pizza hut, as the doughboy, seriously thats all i do, is make dough, i dont make pizzas or nuthin

this is how you make

PIZZA HUT PAN DOUGH

ingredients

12 pounds of water (105 degrees)
2 bags of yeast
3 ounces of veg oil
1 bag of flour (22 pounds)

first add water, then add 2 bags of yeast, mix, let it rest for 2 minutes, then add oil, mix, let it rest for 2 minutes, add flour, mix in a doughbowl for 10 minutes

portioning

personal pans-portion 5 ounces each
smalls- 9 ounces
med- 16 ounces
large- 22 ounces

portion dough, form into dough bowl, let it proof, oil pans, place dough balls through dough roller, stretch and place in pan, spray garlic spray on top to prevent sticking
let it rest in the proofer from 45- 60 minutes, 90 degress (plus/minus 5 degrees), then take out dough, place in walk in freezer/fridge for one hour, then it is ready!!!!

CLASSIC DOUGH (CLASSIC, STUFFED CRUST)

ingredients

12 pounds of water
2 bags of dough yeast
12 ounces of oil
bag of flour (22 pounds)
2 bags of dough blend

add the ingredients in the above order into dough bowl, mix for 10 minutes

portion

med- 15 ounces
large- 20 ounces
ny-  22ounces

portion and form in the same way as pan dough but classic dough DOESNT get rolled, you simply press the dough and flattened  it wit your hand, place it on classic pan (spray with garlic spray before), spay on top, place in proofer for 30 MINUTES

edge dough (edge/ thin crust)

4 pounds, 10 ounces water
1 bag of edge dough
mix for 4 minutes

anybody from toronto, holla at me pizza hut at dixon/martingrove, il hook yo mofos up!!!

hope you enjoy
