I could in no way pick just one trk, there's way too many great hip-hop trks, but close contenders would be:

"Keep Ya Head Up" - Pac
"Ain't Mad Atcha" - Pac
"Cali Love" - Dre/Pac
"Gin & Juice" - Snoop
"...G Thang" - Dre/Snoop
"Express Yourself" - NWA

The greatest ever hip hop track? I'd pick one that represented what hiphop was about, and is just unfadeable... I'd have to go with either Tupac's "Keep Ya Head Up", It's just classic in everway, perfect voice, great flow, nice story, great uplifting beat, awesome song.  Second place would probably be Naughty By Nature's "Hip Hop Horray"... Treach just KILLS it, that's all I listened to when I was a kid.
