I just deleted all the tracks from the iPod, but I just can't seem to "empty" it. If y'all know what I mean.. I got no pics and the addressbook is also empty..

There's an iPod updater program (I think that's the name). You gotta open that and you can completely wipe out the hard drive.

just hit the restore (english..) button on that screen, that will wipe it
you also might have it used as a hard disk, so it can store data that way which won't show up in iTunes
