I still have a lot of East shit to listen to, but from what I've been bumping lately, Kool G Rap, Nas, Big Daddy Kane, C.L. Smooth, Rakim and Raekwon are ALL INCREDIBLE lyricists.And I know there are many more, so I see it as imposible to pick just one

i listen a lot to Nas, Rakim & Masta Ace... but Chuck D, Kool G Rap and all those are also nice.. but i dont really listen that much to them

Yeah it's impossible for me to ever say even 10, let alone 1.  

Beatz, eazye, and Oklin def listed some of my favorites.  Another one of my personal favorites has got to be Jeru the Damaja.  Lyrics / flow / content are unfuckwitable.  

And I'll also say that Chuck D gets overlooked way too much.  He might have the greatest mic presence of all time, constantly drops knowledge and can outright rap his ass off.
