More time means more money spent, besides - publishers dont give a fuck about the problems devs are experiencing. The contract is signed and the devs have to deliver the game to the publisher before the deadline. Any delays and devs' royalties go down. So they have to hurry and it can't be good if you don't have time to polish or test the game because you had to spend months fighting the hardware. And believe me - that's something you'll care about when you get a shitty game.
