Jimi Hendrix - All Along the Watchtower (Bob Dylan)
Placebo - Dark Globe (Syd Barrett)
John Frusciante - Today Your Love, Tomorrow the World (The Ramones)
Red Hot Chili Peppers - They´re Red Hot (Eric Clapton, if his was the OG)
Guns´n´Roses / Eric Clapton (fuck Avril lol) - Knockin´ on Heaven´s Door (Dylan was first, right? Think so at least)
Eric Clapton / Warren G - I Shot the Sheriff (Bob Marley)
Red Hot Chili Peppers - Back in Black (AC/DC)

Sublime:
Smoke Two Joints (The Toys I think)
Steppin´ Razor (Jimmy Cliff I think)
Scarlet Begonias (Grateful Dead)
We´re only Gonna Die for Our Arrogance (Bad Religion)
Hope (The Descendents)
Minor Threat (Minor Threat)
Falling Idols (dunno by whom OG)
Dachau Gabana (The Vandals)
Sour Grapes (The Descendents)
Just Another Day / Prince of Sin / War on the Boulevard (Falling Idols)

then there´s an album with Sublime covers called "Look at all the Love We Found", which has some good stuff

Lagwagon:
Coffee & Cigarettes (Van Morisson)
Bad Moon Rising (Cleerance Creedwater Revival)
Mama Said Knock You out (LL Cool J)

There´s a Radiohead cover album called "Anyone Can Play Radiohead", unfortunately most of it sucks. A string orchestra did a string version of "OK Computer" ("Strung out on OK Computer") which is pretty interesting

and if you wanna count that lol:
2 Live Crew - Banned in the USA (Bruce Springsteen)

that´s what came to mind spontaneously

Snoop Dogg - Vapors, is that considered a cover since it 100% copies Biz Markie's idea?

The Beatles - Twist and Shout, You Really Got a Hold On Me, Money, Mr. Moonlight
The Rollings Stones - Confessin The Blues
Cream - Spoonful
The Doors - Backdoor Man

Just a couple good ones that come to mind.

Most hip-hop is now keyboard driven, because the majority of hip-hop workstations have loops and patches that enable somebody with marginal skills to put tracks together,...

Unfortunately, most hip-hop artists gravitated towards the path of least resistance by relying on these pre-set patches. As a result, electric guitar and real musicians became devalued, and a lot of hip-hop now sounds the same.
