Barbecued Beans

Use dried navy beans, Great Northern, or other white beans in this recipe.
Ingredients:

    * 1 pound dried white beans
    * 3/4 cup barbecue sauce
    * 8 to 10 slices bacon, diced
    * 1/4 cup finely chopped onion
    * salt and pepper, to taste

Preparation:
Wash and pick over the beans (Great Northern or other). Put beans in a large saucepan or Dutch oven; cover with 6 cups water. Bring to a boil; boil for 2 minutes. Cover and let stand for 1 hour, then simmer until tender. Drain, reserving 1/4 cup of the cooking liquid. Cook bacon until just crisp. Remove bacon with slotted spoon and add onions to drippings. Sauté the onions until tender. Add the barbecue sauce and sauteed onion to the beans, along with the cooked bacon and drippings, salt, and pepper.
